Ginger: When an Everyday
Food Becomes Medicine

 

Ginger is so familiar that it is easy to overlook how unusual it really is. The same rhizome sliced into a stir-fry, simmered in soup, or steeped as tea also has a long history as a medicinal substance in China and other parts of Asia. Few plants illustrate the overlap between food and medicine as clearly as Zingiber officinale.

In Chinese, fresh ginger is called shēngjiāng 生薑. It has been used both as food and medicine for centuries. Chinese herbal practice also distinguishes fresh ginger from dried ginger, gānjiāng 乾薑. Although both come from the same plant, traditional Chinese medicine assigns somewhat different properties and uses to each. Modern research confirms that drying also changes the chemical composition of ginger, particularly the balance between compounds known as gingerols and shogaols.

Ginger’s characteristic pungency comes largely from these naturally occurring compounds. Gingerols are particularly prominent in fresh ginger, while some are converted into shogaols as ginger is dried or heated. Both groups have been studied for antioxidant and anti-inflammatory activity, although laboratory activity should not automatically be interpreted as proof of a clinical benefit.

The strongest human evidence for ginger concerns nausea. Researchers have examined ginger for pregnancy-related nausea, postoperative nausea, chemotherapy-associated nausea, motion sickness, and digestive discomfort. Reviews of clinical trials generally conclude that ginger can reduce some forms of nausea, although results vary according to the condition, preparation, and dose. Evidence is especially consistent for reducing nausea during pregnancy, while studies involving other conditions have produced more mixed results.

There may be a physiological reason for this traditional reputation. Ginger appears to influence gastrointestinal movement and several signaling pathways involved in nausea. Studies suggest that it may encourage stomach emptying and affect serotonin and other receptors associated with digestive function.

Ginger has also attracted attention for possible effects on inflammation, blood sugar, cholesterol, and blood pressure. Reviews of randomized clinical trials have found promising results in several of these areas, particularly among people with metabolic disorders. The evidence is not yet uniform enough, however, to justify treating ginger as a substitute for established medical care. Different studies have used different preparations and doses, making simple conclusions difficult.

For most people, ginger’s value does not depend on using it as a concentrated supplement. Fresh ginger contributes flavor while supplying small amounts of nutrients and a range of bioactive plant compounds. More importantly, it can be incorporated naturally into the diet in soups, vegetables, sauces, porridges, and teas.

This is also where the Chinese approach becomes especially interesting. Chinese dietary culture has never maintained a rigid boundary between food and medicine. Some foods are simply nourishing, while others are chosen partly for how they affect digestion, appetite, warmth, or general well-being. Ginger sits comfortably in both worlds.

It does not need to be regarded as a miracle herb to be useful. Its long culinary history, established traditional role, and increasingly substantial body of scientific research make ginger a particularly good example of how an ordinary food can also have measurable physiological effects. Sometimes the most useful medicinal plants are not rare substances kept in an herbal pharmacy, but familiar ingredients already sitting in the kitchen.
